How to use Sourdough Calculator
Calculate sourdough flour, water, starter and salt from total dough weight, target hydration, starter hydration and prefermented-flour percentage.
- Enter the required values or paste text into the interactive workspace.
- Adjust available precision, format, unit or bulk settings as needed.
- Run the calculator or generator and review all output information.
- Download the resulting file or CSV summary; batch outputs can be downloaded as ZIP where available.
How the tool works
Starter flour and starter water are correctly included in the overall dough hydration instead of being counted as extra ingredients.
Example: For 1,000 g dough at 75% hydration, 2% salt and 20% prefermented flour, get weighed ingredient amounts that sum to the target dough weight.
Technical limits: tool-specific validation protects browser memory, input parsing and export reliability. Certain file types or uncommon data may be rejected. Always check important financial results or fabrication files using their original records and professional software.
Frequently asked questions
What does prefermented flour mean?
It is the fraction of total flour that is already inside the starter or levain, not the percentage of starter by mass.
Does starter water count toward hydration?
Yes. Both starter flour and starter water are counted in the total formula.
Can I calculate several loaf weights?
Yes. Enter multiple target dough weights and export the resulting formulas as CSV.
Does this predict fermentation time?
No. Fermentation also depends on temperature, starter activity and flour. This tool calculates weights only.
